Method
1.Preheat the oven to 180°C. Bake potatoes for 40-60 minutes or until cooked. Leave the oven on.
2.Slice potatoes in half lengthways. Scoop out flesh and place potato shells on a baking paper-lined tray. Place flesh in a bowl.
3.Sauté bacon, leek and garlic until soft and golden and add to potato flesh.
4.Add mustard, 2 cups of the cheese, butter and egg to the bowl and mash.
5.Fill potato skins with the mash and top with remaining cheese. Bake in the oven for 15 minutes or until bubbling and golden.
6.Serve immediately with a salad.
