Method

1.Preheat the oven to 200°C. Place the tomatoes, courgettes, garlic and onion in an ovenproof dish. Add the olive oil, toss to coat the vegetables evenly and bake them in the preheated oven for 15 minutes.
2.Cook the penne according to the packet instructions. Toss the penne in the baking dish with the vegetables and crumble over the feta.
3.Season the penne with the salt and pepper. Place the penne in a large serving dish and garnish it generously with the basil leaves.
