Lemon tahini dressing
Method
1.To prepare the spicy prawns, combine the olive oil, lemon juice, salt, chilli flakes, ground cumin and ground paprika in a bowl. Add the prawns and mix to coat them evenly.
2.Spray a non-stick frypan with the oil spray and heat it over a medium heat. Add the prawns and cook them for 3-4 minutes, or until they are golden brown and cooked through. Set the prawns aside to cool slightly.
3.To prepare the dressing, place the lemon juice, tahini, lemon zest, honey and garlic in a bowl and mix to combine. Whisking constantly, add the olive oil in a thin stream. Whisk in enough warm water to make a smooth dressing and season with the salt and pepper.
4.Place the shredded lettuce, avocado and cucumber into individual serving dishes, top with the prawns and drizzle over the dressing.
