Method
1.Preheat oven to 200°C/400°F.
2.Place garlic on oven tray; roast, uncovered, about 10 minutes or until soft. Cool; peel garlic.
3.Blend or process garlic and yoghurt until smooth; stir in mint.
4.Coat fish in combined flour and spices; shake off excess. Heat oil in large frying pan; cook fish, both sides, until browned and crisp.
5.Spread yoghurt over one half of bread; top with lettuce, tomato, onion, fish and remaining bread. Cut into 12 slices.
We used sand whiting fillets in this recipe.
