Ingredients
Corn and prawn fritters
1/2 cup self-raising flour
2 eggs, lightly beaten
500 gram garlic-marinated peeled prawns, finely chopped
2 corn cobs, kernels removed
2 spring onions, thinly sliced
1/2 cup chopped coriander, plus extra sprigs to serve
1/2 cup vegetable oil
sweet chilli sauce, lime wedges to serve
Asian salad
1/2 small red cabbage, shredded
2 carrots, peeled, shredded
1 bunch radishes, thinly sliced
100 gram original fried noodles
4 spring onions, sliced
2 tablespoon oriental salad dressing
Method
1. In a bowl, whisk flour and eggs until smooth. Add prawns, corn kernels, onion and coriander. Season.
2. In a frying pan, heat oil on medium. Cook tablespoons of mixture in batches for 2-3 minutes each, turning, until golden. Drain on a paper towel.
3. For the Asian salad: In a large bowl, combine all the ingredients.
4. Sprinkle salad with coriander sprigs and drizzle with sweet chilli sauce. Serve salad with fritters and lime wedges.
