Corn and prawn fritters
Asian salad
Method
1.In a bowl, whisk flour and eggs until smooth. Add prawns, corn kernels, onion and coriander. Season.
2.In a frying pan, heat oil on medium. Cook tablespoons of mixture in batches for 2-3 minutes each, turning, until golden. Drain on a paper towel.
3.For the Asian salad: In a large bowl, combine all the ingredients.
4.Sprinkle salad with coriander sprigs and drizzle with sweet chilli sauce. Serve salad with fritters and lime wedges.
