Char-grilled courgette pasta salad

A quick yet simple char-grilled courgette and pasta salad enough for two!

Ingredients

Method

1.Cook the pasta in a large pot of boiling salted water following packet instructions. Drain and set aside to cool.
2.Meanwhile, preheat a barbecue plate or char-grill pan on medium. Lightly spray the courgette slices with olive oil. Cook for 2-3 minutes each side until lightly browned on both sides and tender.
3.Transfer to a plate and cool. Cook the prosciutto for 1 minute each side until crispy. Break into pieces.
4.In a small jug, whisk the oil, juice and garlic together with seasonings to taste.
5.Combine the pasta, courgettes and basil in a large bowl, add the dressing and toss gently. Divide into 2 serving bowls and top with crispy prosciutto and parmesan shavings.

Pasta can be cooked one day in advance. Toss through a little olive oil, cover and refrigerate.
