1.In a large saucepan of boiling, salted water cook pasta according to packet directions. Drain.
2.Meanwhile, heat oil in a frying pan on high. Cook zucchini for 3-5 minutes, until starting to colour. Remove and set aside. Add tomatoes, olives and ham to pan. Cook for 3-5 minutes, until tomatoes have just split.
3.Toss through hot pasta with zucchini and rocket. Season to taste. Transfer to serving plates and serve immediately topped with goat’s cheese.
Use a vegetable peeler to slice unpeeled zucchini into ribbons.
