Method
1.Combine cherries, apricot delights and ice-cream in a large bowl. Freeze for 30 minutes or until firm.
2.Place chocolate in a small heatproof bowl over a saucepan of simmering water (don’t let base of bowl touch the water). Cook, stirring, for 2 minutes or until melted and smooth.
3.Line a baking tray with baking paper. Working quickly, scoop ice-cream into 12 equal-sized balls. Place balls on prepared tray.
4.Drizzle with chocolate. Sprinkle with cachous. Freeze for 10 minutes or until set. Serve.
Replace apricot delights with 1/3 cup toasted desiccated coconut, if preferred. Chocolate can be melted in the microwave. Place chocolate in a microwave-safe bowl and microwave on High (100%) in 30-second bursts, stirring, until melted and smooth. Cachous are tiny, shiny, sweet, edible balls available in many colours sizes. For toddlers, don’t use cachous. They can be a choking hazard.
