Method

1.Using an electric mixer, beat egg whites in a small, clean dry bowl until soft peaks form. Gradually add caster sugar; beat until dissolved.
2.Half-fill a large, deep frying pan with water and bring to a simmer over low heat.
3.Using 2 small metal spoons, shape meringue into 12 ovals; slide into water; simmer for 2 minutes each side. Using a slotted spoon, transfer snow eggs to a tray.
4.Combine white sugar and water in a small saucepan over moderate heat. Stir mixture until sugar dissolves.
5.Add passionfruit; bring to the boil. Reduce heat; simmer, uncovered, for 3 minutes or until syrup thickens slightly.
6.Divide passionfruit syrup among 4 shallow serving bowls. Top syrup with snow eggs. Serve.
