Method
1.Preheat oven to moderate, 180°C. Lightly grease 6 shallow 1-cup ramekins.
2.In a large bowl, combine rhubarb, strawberries and sugar. Spoon into dishes.
3.To make Crumble; sift flour into a bowl. Using fingertips, rub in butter until mixture resembles breadcrumbs. Stir in pistachios and sugar.
4.Sprinkle crumble evenly over fruit in each dish. Bake 15-20 minutes, until golden. Serve warm.
You’ll need an 80g packet of pistachios.
