Mum’s rich fudge and walnut cake

Nici Wickes shares her mum's delicious fudge cake recipe - it's wonderfully dense and rich, just like panforte. Serve dusted in icing sugar or cocoa powder and cut into small wedges for sharing

Method

1.Preheat oven to 180°C. Line a 20cm loose-bottom cake tin with baking paper.
2.Gently melt the butter and chocolate, then add the brown sugar, vanilla and salt. Stir well. Mix in the beaten eggs. Now add the flour, baking powder and walnuts, making sure everything is well mixed.
3.Tip the mixture into the prepared tin. Bake for approx 30 minutes or until a glaze forms on top and the cake pulls away from the sides. Let cool and remove from the tin.
4.Serve dusted with icing sugar or cocoa powder and cut in small wedges.
  • Serves 10-12 – This cake keeps and is so handy to have on hold to serve with coffee and tea for unexpected but welcome friends who drop in. – If you’re not a fan of walnuts, try hazelnuts or cashews instead.
