Method

1.Scrape out grapefruit shells with a spoon and place in freezer until frozen.
2.Combine grapefruit juice and Sorbet Syrup.
3.Churn in an ice-cream machine according to manufacturer’s directions, adding Aperol 10 minutes before end of churning. Or pour into a 1L non-reactive metal loaf pan, cover tightly with aluminium foil and place in freezer until a 2cm solid rim forms around edge.
4.Transfer to a chilled bowl, add aperol and beat until a smooth sludge forms. Return to pan to freeze overnight.
5.Scoop into frozen shells to serve.

Aperol is a bitter orange flavoured Italian aperitif. Alcohol freezes at a lower temperature, so add it towards end of churning or halfway through freezing.
