Method
1.Preheat oven to hot, 200°C. Line 2 oven trays with baking paper.
2.Cut 2 x 12cm rounds from each sheet of pastry (you will have 4 in total). Arrange 1 each on prepared tray. Chill until required.
3.In a bowl, beat butter until pale. Add sugar and continue beating until creamy. Mix in egg, then fold in hazelnut meal and flour.
4.Put a quarter of the hazelnut mixture in the middle of each pastry round, leaving 2cm of pastry around the edge. Arrange cherries on top. Fold up the pastry so it encases but doesn’t cover the filling.
5.Bake for 15-20 minutes or until the pastry is golden and the filling is firm. Serve drizzled with custard.
You can make your own hazelnut meal in a food processor or blender. You can also use almond meal in this recipe.
