Cinnamon honey rice pudding

There’s nothing like a warm nourishing bowl of rice pudding as the weather turns chilly. This creamy recipe, with its gentle spice notes of vanilla and cinnamon, is sure to become a family favourite. Serve with tinned preserved fruit or this decadent fruit compote for a final flourish (shown)

Rice pudding
Fruit compote

Method

1.For the rice pudding, place rice and water in a saucepan over medium heat and bring to the boil, stirring occasionally.
2.Reduce heat and simmer for around 15 minutes or until most of the water has been absorbed.
3.Add the CARNATION Creamy Evaporated Milk, sugar, honey, cinnamon and vanilla seeds and pod.
4.Stir to combine and cook for around 1 hour over low heat, until the mixture is creamy and most of the liquid is absorbed.
5.Discard the vanilla pod and serve rice warm with toasted almond flakes and an extra drizzle of honey (optional) and fruit compote (optional)
6.Place all the fruit compote ingredients in a medium saucepan and gently simmer until the fruit has plumped and the juices have become sticky (around 20 minutes). Remove from heat, discard cinnamon stick and set aside.
