Berry strudels

Golden, crumbly pastry is absolutely divine stuffed with rich cream cheese and a sweet, oozy berry filling. Top your strudels with flaked almonds for extra crunch.

Method

1.Preheat oven to 200°C (180°C fan-forced). Line a baking tray with baking paper.
2.Using an electric mixer, beat cream cheese, zest and sugar in a medium bowl until well combined. Add egg, beat until combined.
3.For each strudel, place 1 sheet pastry on a clean work surface. Brush with butter. Top with another sheet of pastry. Fold in half. Spread a quarter of the cream cheese mixture over pastry. Spoon a quarter of the berries over the edge nearest you. Fold in 2 long sides of pastry then roll from a narrow side to enclose filling. Place parcels seam-side down, on prepared tray.
4.Brush strudels with butter. Sprinkle with almonds. Bake 12-15 minutes, or until golden brown. Serve strudels dusted with icing sugar.

To save money, use drained canned berries. You could add chopped dark eating chocolate to the filling for an extra flavour hit.
