Maple icing

1.Using an electric mixer, beat cream cheese, syrup and zest in a small bowl until light and fluffy.

Banana muffins

2.Preheat oven to 200°C/180°C fan forced. Grease a 12-hole (1/3-cup) muffin tray.
3.Sift dry ingredients into a large bowl. Stir in syrup and banana. Stir in egg, buttermilk and oil (do not over-mix). Spoon into prepared holes. Bake for 20 minutes or until a skewer inserted at centre comes out clean. Cool muffins in tray for 5 minutes. Transfer to a wire rack to cool completely.
4.Make Maple Icing as recipe directs. Spread top of each muffin with icing. Sprinkle with walnuts. Serve.
