Method

1.Preheat oven to moderate, 180°C (160°C fan-forced). Lightly grease a 20cmx30cm slab pan. Line base and sides with baking paper, allowing a 2cm overhang on long sides.
2.In a bowl, using an electric mixer, beat butter and eggs together. Add flour, sugar, sour cream, custard powder and vanilla to bowl. Continue beating on low speed, until pale and creamy.
3.Pour half the mixture into pan. Spread apple over. Top with remaining mixture.
4.To make crumble: Sift flour and cinnamon into a bowl. Add sugar, then rub in butter, using fingertips, until mixture resembles coarse breadcrumbs. Sprinkle over cake mixture.
5.Bake 55-60 minutes, until cooked when tested with a skewer. Cover with foil it browning too quickly. Serve warm, sliced, with cream.
