Method

1.Whisk eggs, caster sugar and vanilla in a bowl. Whisk in milk.
2.Heat butter and oil together in a medium frying pan on high. Dip each slice of bread into the egg mixture to coat well. Fry for 2-3 minutes each side or until crisp and golden. Drain on paper towel. Repeat with remaining bread.
3.Toss strawberries and rosewater in a bowl. Spread toast with jam and cut into halves diagonally. To serve, top with strawberry mixture and yoghurt. Dust with icing sugar.

Butter and oil are often heated together for cooking as the butter gives a good flavour and the oil allows for higher temperatures to be used. If you don’t have raisin toast, use white or wholemeal bread with crusts removed.
