Method

1.Heat oil in a large frying pan on high. Saute chorizo 3-5 minutes, until browned.
2.Add tomatoes and chilli and cook 1 minute, until softened. Stir in salsa and simmer 1-2 minutes. Remove from heat; add coriander and onion. Cover to keep warm.
3.To make guacamole, in a small bowl, mash avocado with lemon juice. Season to taste.
4.Heat a medium frying pan on medium. Lightly spray each tortilla with oil. Cook 30 seconds each side, until lightly golden.
5.Spread tortillas with guacamole, top with egg and a dollop of chorizo mixture. Sprinkle with extra coriander and cheese and season to taste. Serve with chilli sauce.
