Maple butter
Method
1.Sift flour into a large bowl. Stir in sugar. Make a well in the centre of dry ingredients.
2.In a jug, whisk together milk, egg and butter until well combined. Gradually whisk into the well until batter is smooth.
3.Heat a large non-stick flying pan on medium. Brush with extra butter.
4.Spoon 4 level tablespoons of batter into the pan. Top each round with a slice of kiwifruit. Cook for 1-2 minutes until bubbles appear on the surface, then turm to cook the other side for 1 minute until golden. Transfer to a wire rack. Repeat with remaining batter and kiwifruit.
5.Meanwhile; to make maple butter; in a small bowl, using an electric mixer, beat butter until creamy. Gradually beat in syrup. Serve pikelets with maple butter.
makes about 12 These pikelets freeze well – thaw and reheat in microwave on medium for 20 seconds for each pikelet.
