Ingredients

Buttermilk pancakes
Maple berries

Method

1.Sift flour and soda together into a large bowl. Stir in sugar. Make a well in the centre of the flour mixture. Gradually whisk in combined buttermilk and egg until smooth.
2.Melt 1 teaspoon butter in large frying pan on medium heat. Pour quarter cupfuls of batter into pan in batches. Cook 2 minutes until bubbles appear on surface and underside is golden. Flip and cook further 1-2 minutes, until cooked through. Transfer to a plate and cover to keep warm. Repeat with remaining mixture, melting more butter in pan as required.
3.To make maple berries: Combine all ingredients in medium frying pan. Heat on medium, until simmering. Cook gently 3-4 minutes, stirring occasionally, until mixture has slightly thickened.
4.Serve pancakes with warm berries and a dollop of yoghurt.

For banana pancakes, top uncooked side of pancake with a few thin banana slices before turning.
