Method

1.In a bowl, combine flour, caster sugar and coconut. Make a well in centre and gradually whisk in combined milk and egg yolks.
2.Heat oil in a saucepan on medium, until a drop of batter sizzles immediately.
3.Coat banana pieces in batter, allowing excess to drip off. Add to oil in batches and cook for 3-5 minutes, turning, until golden.
4.Drain on paper towel. Dust with icing sugar. Serve hot with ice-cream and lemon or lime wedges.

Mix batter until lump- free. If possible, allow to stand for 10-15 minutes.
