Method
1.Heat oven to 200C or 180C fan bake. Grease a 12-hole standard muffin tin or line with paper cases.
2.In a large bowl, beat butter and sugar together until pale and creamy. Beat in eggs and then stir in milk alternating with flour. Stir in coconut and dried apricots.
3.Spoon mixture into prepared muffin tins. Combine the topping ingredients in a small bowl and then sprinkle a little over each muffin.
4.Bake for 20 minutes or until puffed and golden brown.
