Basic wet mix
2 bananas, mashed
⅓ cup extra virgin olive oil
3 organic eggs
½ cup maple syrup
1 tsp vanilla extract
Method

Preheat oven to 180°C. Line 8 mini loaf tins with baking paper and brush with oil or spray with non-stick spray.

In a medium bowl, combine basic wet ingredients.

Choose a dry ingredient combination from the five options below and follow instructions to complete the mixture.

Place loaves in oven and bake for 20-30 minutes, (timings will vary depending on what you have added). Pierce one of the loaves with a bamboo or metal skewer; if it comes out clean, the loaves are cooked.

Remove from oven and leave to cool before removing from tins.
Sweet maple walnut loaf
Combine 1 cup ground almonds, 1 cup ground walnuts, 1 tsp baking powder, a handful chopped walnuts, a handful chopped dates, with a pinch of salt, in a second bowl. Mix wet into dry ingredients and spoon into mini loaf tins. See step 4 to bake.
Raspberry & lemon loaf
Combine 2 cups ground cashews and 1 tsp baking powder in a second bowl with a pinch of salt. Mix wet into dry ingredients then gently fold through zest 1 lemon, ½ cup thread coconut and 1 cup frozen raspberries then spoon into mini loaf tins. See step 4 to bake
Spicy carrot loaf
Mix 2 cups ground almonds, 1 tsp baking powder, 1 cup grated carrot, handful sultanas, 2 tsp sunflower seeds, ½ tsp cinnamon, large pinch cardamom,¼ tsp ground ginger, and 1 tsp baking powder in a second bowl with a pinch of salt. Mix wet into dry ingredients and spoon into mini loaf tins. See step 4 to bake.
Blackcurrant & apple loaf
Combine 1 apple, peeled and grated with 2 cups ground almonds, 1 tsp baking powder and a pinch of salt in a second bowl. Mix wet into dry ingredients (you might need to add a little more almond meal to the mix, to get the right consistency) then gently fold through 1 cup frozen blackcurrants and spoon into mini loaf tins. See step 4 to bake.
Chocolate orange loaf
Combine 2 cups ground almonds, 1 tsp baking powder, zest 1 orange, 90gv 100% Samoan Cacao (or other good-quality cooking chocolate), and a dash** rum (optional) in a second bowl with a pinch of salt. Mix wet into dry ingredients and spoon into mini loaf tins. See step 4 to bake.
