1.Place the avocado flesh in the food processor and blend with the cream cheese, lemon juice and zest and salt until smooth. Add the spring onion, spinach leaves and sour cream and whizz until creamy.
2.Transfer the mix to little jars and top with pepper, herbs and lemon zest. Serve with smoked salmon and capers on crackers or crostini.

- These cute avocado pots are delicious served with smoked salmon for an easy entrée. The pâté is so versatile, you can also mix it through potato salad, dollop it onto chicken schnitzels or nachos or use it as a tasty spread for burgers or sandwiches.
