Warm panzanella salad

A traditional Tuscan dish, panzanella salad is a beautifully fresh dish, perfect for Summer time entertaining. Tossed with chunks of warm, toasted Italian bread and crispy prosciutto, fresh tomatoes and herbs are beautiful drizzled with a tangy olive oil dressing.

Ingredients

Method

1.Heat half oil in a large frying pan on medium. Fry bread and prosciutto 4-5 minutes. Keep warm.
2.Meanwhile, in a large salad bowl, combine tomatoes, cucumber, onion and herbs.
3.In a jug, whisk remaining oil and vinegar together. Season to taste. Toss crouton mixture through salad. Drizzle with dressing to serve.
