Method

1.In a bowl, combine ricotta, eggs, flour, currants, honey and vanilla.
2.Heat oil in a frying pan on medium. Place tablespoon measures of batter into pan, flattening lightly with a spatula. Cook in batches for 1-2 minutes each side, until cooked through and golden. Drain on paper towel.
3.Dust with icing sugar. Serve topped with extra honey and sliced banana, if desired.
