1.Beat the cream with the icing sugar and vanilla essence. Fold through the lemon honey and mascarpone, being careful not to overmix as you want a marbled effect.
2.Into serving glasses, place a layer of the smashed meringues, followed by a layer of the lemon cream. Repeat the layers, finishing with whole or smashed meringues. Serve immediately.
