Ingredients
Jam for lamb
- 1/3 cup (80ml) olive oil
- 2 (300g) brown onions, thinly sliced
- 2 (350g) fresh beetroot, trimmed, peeled, coarsely grated
- 1 fresh long red chilli, finely chopped
- 1/3 cup (80ml) sherry vinegar
- 2 tablespoon caster sugar
- 2 tablespoon finely chopped fresh mint
- 1/2 teaspoon coarse cooking salt
Method
Jam for lamb
- 1Heat oil in medium saucepan. Cook onion, beetroot and chilli, for 45 minutes with lid on pan. Stir occasionally, until vegetables soften.
- 2Remove lid and add vinegar and sugar. Continue stirring and cook without lid for about 20 minutes or until jam is thick. Remove from heat and stir in mint and salt.
- 3Spoon hot jam into hot sterilised jars; seal immediately. Label and date jars when cold.
