Apple and cinnamon granola

Full of whole grains, nuts, seeds and delicious dried fruits, this muesli is perfect for a sweet wholesome breakfast.

Ingredients

Method

1.Preheat the oven to 170°C (150°C fan-forced).
2.Place the honey and oil into a small saucepan and heat until melted.
3.Place the oats, rye, almonds and sesame seeds into a large baking tray, add the honey mixture and toss to coat.
4.Bake in the oven for 15 minutes, stir and return to the oven.
5.Repeat this twice more, then add the coconut and return to the oven for a final 15 minutes or until golden brown.
6.Cool, then stir through the apple and cinnamon.
7.To make the rhubarp, place into a saucepan with the sugar, cinnamon sticks and one tablespoon of water.
8.Cover with a lid and gently stew for 5-10 minutes or until the rhubarb has softened but is still holding its shape.
9.Serve the granola with poached rhubarb and yoghurt.
