Method

1.In a large saucepan, heat oil on high. Saute onion 1-2 minutes, until tender. Add potato, celery, carrots, garlic, oregano and chilli. Cook, stirring, 2-3 minutes.
2.Add water and tomatoes. Bring to boil. Reduce heat to medium and simmer 15-20 minutes, until vegetables are tender.
3.Add all beans and simmer for a further 2-3 minutes, to heat through. Season to taste. Serve topped with parmesan. Accompany with toast.
