Vegan-friendly banana bread with walnuts

If you are looking for a vegan-friendly banana bread, this one is for you! The addition of walnuts brings a lovely crunch. Don’t tell your friends this doesn’t have dairy or egg, they will never know it’s any different to any other banana bread!

Preheat oven to 180°C. Grease and line a loaf tin.

Put the dates, brown sugar and water in a saucepan, then cook over low heat for 3-4 minutes. Bring to the boil for 2 minutes, then take off the heat. Add the remaining ingredients and stir well.

Spoon into the prepared tin and smooth the surface with the back of the spoon, making a slight dip lengthwise in the middle so that when it rises, it will rise to flat.

Bake for 40 minutes or until a skewer comes out clean. Cool for 5-10 minutes before turning out onto a wire rack.

Serve in thick slices.

  • Makes 10-12 slices. – Try serving with butter that has been whipped together with orange zest, then add a drizzle of honey if you aren’t vegan or dairy-free. – This banana bread toasts well too.
