Method

1.In a food processor, combine yolks, lemon juice and mustard. Pulse until thick and pale.
2.With motor running, add oil in a gradual, thin, steady stream through chute until very thick. Season to taste.
3.Add eschalot, cornichons, capers and herbs. Process until well chopped. Season to taste.
