1.Preheat oven to 180°C. Lightly grease a 30cm casserole dish.
2.Place cauliflower and broccoli into a large saucepan. Cover with water. Bring to the boil. Reduce heat to simmer, covered, for 6-8 minutes until tender. Drain well. Place in prepared dish.
3.Meanwhile, to make sauce, melt butter in a saucepan over medium heat. Blend in flour. Cook, stirring with a wooden spoon, for 1 minute (this is known as a ‘roux’). Do not brown. Remove from heat. Gradually blend in milk, until smooth.
4.Return to heat. Cook on high, stirring constantly, until sauce boils and thickens. Reduce heat to low and simmer for 3 minutes. Season to taste.
5.Pour sauce over vegetables. Sprinkle with combined cheeses and breadcrumbs. Bake for 20-30 minutes, until bubbling and golden.
