1.Whisk eggs, Add flour. Season and mix until a thick batter forms. Stir in zucchini and feta.
2.Heat oil in a large frying pan on medium. Cook tablespoons of fritter mixture, in batches, 2 minutes each side, until cooked through and golden.
3.Serve hot with tzatziki and lemon wedges
For perfectly fluffy fritters. use your hands to squeeze the grated zucchini, and extract as much moisture as possible.
