Chilli dipping sauce
Method
1.Combine mince, ginger, chilli, black pepper, sesame seeds, fish sauce and coriander in a medium bowl. Shape 2 tablespoons of the mince mixture into a patty. Repeat to make 12 patties. Place on a plate. Cover with plastic food wrap; chill for 15 minutes.
2.Heat a char-grill pan over moderately high heat. Brush patties with oil. Add to pan; cook for 2-3 minutes each side or until cooked.
3.Make chilli dipping sauce by combining chilli, fish sauce, lime juice and sugar in a small bowl.
4.Serve pork patties with dipping sauce and lime wedges.
