1 scoop almond ice cream

15 millilitre raspberry cordial

30 millilitre Cointreau

30 millilitre sweet dark rum

30 millilitre orange juice

Method

1.Prepare a scoop of ice cream in a martini glass, add the raspberry cordial around the base of the ice cream and freeze.

2.Stir the Cointreau, sweet dark rum and orange juice with ice in a cocktail shaker.

3.Remove glass from freezer, strain the stirred ingredients into glass and serve. Garnish with a little extra ice cream if desired.
