Method
1.Place bulghur wheat and tomato juice in a bowl and set aside for 30 minutes.
2.Combine the mince, garlic, cinnamon, cumin, coriander, parsley and bulghur wheat in a bowl. Season and mix well.
3.Shape mixture into oblong-shape patties.
4.Mix the parsley, tomatoes and pine nuts together, season with salt and pepper and drizzle with a little extra virgin olive oil.
5.Heat oil in a frying pan and cook lamb until well coloured and cooked through.
6.Toast pita bread until golden and then gently open up with a sharp knife.
7.Serve lamb in pita bread with tomato, parsley salad.
