Quick and Easy October 31, 2011 Sweet and spicy apricot chicken Australian Table Serves 2 Prep 10M Cook 10M Total 20M Women's Weekly Food Previous Next Print Ingredients 1 tablespoon olive oil 2 chicken breast fillets, sliced 1/2 teaspoon ground cumin 1/2 teaspoon ground coriander 1/2 cup (125ml) apricot nectar 1/2 cup (125ml) chicken stock 1/4 cup (135g) sliced dried apricots 50 gram green beans, halved 8 black olives couscous, cooked according to packet directions, to serve 1 tablespoon coriander leaves, to serve Method 1.Heat olive oil in a large frying pan on high. Add chicken and spices, and sauté for 5 minutes. 2.Stir in apricot nectar, chicken stock, apricots, beans and olives, and season to taste. Simmer for 5 minutes. 3.Spoon couscous onto plates, top with chicken and coriander. Serve.
