Method

1.Carefully split each chilli lengthways to create a pocket, leaving ends intact. Remove and discard seeds and pith.
2.Combine mince, lime leaves, coriander, soy sauce and sambal oelek in a bowl. Using a teaspoon, fill each chilli with mince mixture until slightly bulging. Smooth over filling with back of a wet spoon.
3.Heat oil in a large frying pan on medium. Add chillies, mince-side down, and cook for 4 minutes each side, until lightly browned and cooked through.
4.Place all sauce ingredients with 1/3 cup water in a small saucepan. Stir on high heat until boiling. Reduce heat to low and simmer for 5 minutes, until sauce thickens. Arrange chillies on a plate. Pour over sauce and serve.

Long chillies aren’t as fiery as small ones, so don’t be scared to try them. Sambal oelek is an Indonesian chilli paste available at supermarkets.
