Ingredients
Noodles
4 tablespoon vegetable oil
300 gram chinese red pork – braised pork or cooked pork meat, sliced
4 tablespoon sweet soy sauce
3 spring onions, thinly sliced diagonally
2 bok choy, cut in half lengthways, washed, then thinly sliced
400 gram noodles – i used large egg noodles blanched in salted boiling water for 2 minutes, then drained
1 large handful beansprouts
1/2 cup coriander leaves
Paste
1 tablespoon ginger, chopped
2 clove garlic
2 tablespoon coriander stalks
2 small red chillies, chopped
Method
1. Put all paste ingredients in a mortar and pestle and bash well.
2. Heat oil in a large wok until smoking. Add pork and paste and toss well. Add sweet soy, spring onions, bok choy, then the cooked noodles. Mix well and season to taste. Add beansprouts and coriander leaves, then serve.
