Method
1.Preheat oven to 220°C.
2.Scrub the potatoes and cut into quarters, lengthwise. Scatter over the lemon slices. Add a drizzle of oil and salt. Bake for 30 minutes or until they’re golden and the potatoes are cooked through.
3.In a large bowl, gently toss chunks of salmon with the gherkins, spinach and the hot potatoes and lemons.
4.Pile onto two plates and drizzle with a dressing of yoghurt, lemon juice and olive oil whisked together.
Note
- Hot-smoked salmon is used in this recipe, but why not try smoked chicken and roasted pumpkin or smoked kahawai and roasted sweet potatoes or leftover lamb and kumara instead? – And if you’re not a fan of spinach, try a mixed salad, an undressed coleslaw or steamed broccolini.
