Method
1.Combine coconut milk and laksa paste in a saucepan over moderate heat. Simmer, covered, stirring occasionally, for 5 minutes. Add 2 cups boiling water,juice and fish sauce. Simmer, covered, for 3 minutes.
2.Meanwhile, place noodles in a heatproof bowl; cover with boiling water Stand for 3 minutes. Stir to separate strands. Drain. Divide among serving bowls.
3.Add bok choy stems and pork to laksa mixture. Cook, covered, for 3 minutes. Stir in bok choy leaves. Cook, covered, for 2 minutes more or until pork is cooked. Divide half the bean sprouts among serving bowls. Ladle hot soup into bowls. Sprinkle with remaining bean sprouts, coriander and chilli. Serve.
The heat of laksa paste varies between brands. Adjust quantity to suit your taste.
