Ingredients: 2 medium_piece (480g) oranges; 400 gram shaved rare roast beef; 850 gram can whole baby beetroot, drained, halved; 150 gram baby rocket leaves; 1/2 cup (125ml) buttermilk; 1/4 cup (75g) mayonnaise; 1 tablespoon wholegrain mustard; 100 gram blue cheese, crumbled

Method

1.Segment oranges over large bowl, reserve 1 tablespoon juice separately.

2.Add beef, beetroot and rocket to bowl.

3.Whisk reserved juice, buttermilk, mayonnaise and mustard in small bowl. Sprinkle cheese over salad, drizzle with dressing.
