Mixed mushrooms with egg noodles

This tasty noodle dish is full of flavour and texture with tasty mixed mushrooms and fresh greens sauteed in a fragrant Asian sauce.

Method

1.Prepare noodles according to packet directions. Place in a warmed bowl and set aside. Mix vegetable stock, oyster sauce, light soy sauce and cornflour in a bowl.
2.Heat rice bran oil in a wok on high. Stir-fry garlic 1 minute, until fragrant. Add broccolini, tossing. Cover and cook 30 seconds. Stir in ginger and mixed mushrooms. Add stock mixture and toss to coat. Cover and cook another 1 minute.
3.Fold prepared noodles gently through mushroom mixture to serve.

Use any combination of mixed mushrooms you prefer, such as enoki, shiitake and oyster.
