Method
1.Separate the leaves of the bok choy, rinse well (do not drain) and cut in half lengthways.
2.Place the bok choy in a large, microwave-proof dish and cover with plastic wrap. Cook for 2 minutes, stir and allow to stand for a further minute.
3.Combine the dressing ingredients and toss the dressing through the greens. Sprinkle with the roasted peanuts and serve immediately.

- Serves 4 as a side dish.
