Ingredients

2 large tomatoes

1/4 cucumber

1 red capsicum

3 spring onions

425 gram can organic lentils, drained

1 cup mint, chopped

1 1/2 cup Italian parsley, chopped

zest of 1 lemon

Dressing

juice of 1 lemon

1 teaspoon 100% pure maple syrup

1 teaspoon apple cider vinegar

1/4 cup olive oil

1 clove garlic, crushed

1 1/2 teaspoon sea salt

freshly ground black pepper

Method

1.Dice the tomatoes, cucumber, capsicum and spring onions and place them in a bowl.

2.Add the drained lentils, chopped herbs and zest and toss to combine.

3.Mix all the dressing ingredients together and pour them over thelentil mix.

4.Stir to combine and serve.
