Method
1.Spray a large frying pan with cooking oil spray; heat on high. Stir-fry lamb, in batches, 3 minutes, until lightly browned. Remove from pan. Cover to keep warm.
2.Reduce heat to medium. Cook onion, stirring, 5 minutes, until soft and golden. Add capsicum. Cook 5 minutes, until tender. Stir through tomatoes and paprika; bring to the boil. Reduce heat to low; simmer 5 minutes, until sauce thickens. Stir through lamb. Season and simmer further 2-3 minutes, until lamb is heated through.
3.Meanwhile, bring a large saucepan of salted water to the boil. Cook gnocchi according to packet directions. Drain; return to pan. Add lamb goulash; gently toss to combine. Serve.
Canned cherry tomatoes add juice to the sauce in this dish, plus the perfectly round globes look fantastic. Find them in the canned tomato aisle in supermarkets. To introduce the flavour of smoked paprika to kids, start with a mix of smoked and sweet. If it’s a meal for adults only, you can use all smoked instead of sweet.
