Apple raita
Method
1.Steam kumara over a saucepan of boiling water 10-12 minutes, until tender. Transfer to a large bowl. Mash and cool.
2.Place chickpeas, coriander and curry paste into the bowl of a food processor. Pulse until well chopped (do not purée). Transfer to a large bowl with kumara and 1 cup breadcrumbs. Mix well and season to taste.
3.Shape into 4 even-sized, flattened patties. Coat in remaining breadcrumbs. Chill 30 minutes.
4.To make the apple raita; mix all ingredients together in a small bowl and season to taste.
5.Heat oil in a large frying pan on medium. Cook patties for 4-5 minutes each side, until cooked through. Drain on paper towel.
6.Top each Turkish bread base with lettuce, a patty, raita and remaining bread.
You can use other bread or roll of choice. Use ready-made tzatziki if preferred.
Note
