Grilled fish with parsley almond crust

This tasty seafood dish makes a perfect mid week dinner - white fish is topped with a zesty parsley almond crust and grilled to flaky perfection.

Method

1.Combine parsley, almonds, breadcrumbs and juice in a small bowl.
2.Preheat an oven-grill to moderate. Heat oil in a large frying pan over moderate heat. Add fish. Cook 5 minutes. Top with breadcrumb mixture. Dot with butter. Cook under grill until fish is cooked and crumb is golden.
3.Combine beans, feta and capsicum. Mix reserved oil with extra juice. Pour over salad; toss to combine. Serve fish with salad.

To prevent frying pan handle burning under the grill, cover handle with fail. Use fresh broad beans when they’re in season. You’ll need to process 2 slices of day-old white bread for crumbs.
